Steps:
- Combine butter & sugar. Add & blend egg yolk. Sift together flour and cinnamon and stir.
- Press mixture into a 15x10x1" pan that has been lined with either wax paper or parchment paper. Beat egg white until frothy and spread over mixture. Sprinkle with almonds.
- Bake at 350 degrees F for 20 minutes. Remove from oven and cut to desired pieces while still warm. (appox. 2"x2") Then place back in oven (turned off) to continue to crisp.
