JAMAICAN RICE AND PEAS image

Number Of Ingredients 11

2 tsp vegetable oil
4 green onions, sliced
2 cloves garlic, minced
2-1/4 cups chicken stock
1 cup coconut milk
1 Scotch bonnet pepper or cayenne pepper
1/2 tsp dried thyme
1/4 tsp salt
8 whole allspice
1-1/2 cups converted rice
1 cup drained red kidney beans

Steps:

  • In saucepan, heat oil over medium heat; cook onions and garlic for 1 minute. Add stock, coconut milk, pepper, thyme, salt and allspice; bring to boil. Add rice; return to boil. Cover and cook over medium-low heat for 15 minutes. Stir in beans; cook for 10 minutes or until rice is tender. Discard pepper and allspice.
