JAMAICAN PORK image

1 tb. butter
1 tsp curry powder
3 medium bananas
1 lb. pork tenderloin, cubed
1/2 cup pineapple juice
1/4 cup minced onion
1/2 cup flaked coconut

Steps:

  • 1.melt butter in large skillet, stir in curry powder and cook until foamy. 2. Cut bananas into 1/2 inch rounds and saute in curry butter until golden brown. 3. Remove from skillet with slotted spoon, set aside. 4. Add pork cubes to skillet and saute until golden brown Salt to taste. 5. Stir in pineapple juice and minced onion. Cover and simmer 10 minutes until pork is tender. 6. Stir in coconut and bananas and toss lightly. Serve with rice.
