JALAPENO POTATO SOUP WITH HAM image

Some people like hot soup. This soup is hot in more ways than one. It is good with tortilla chips. A friend of mine gave my this recipe. If you don't like it so spicy just put half of the jalapenos. COOKBOOK RECIPE

Number Of Ingredients 12

1 - onion chopped
1/4 cup(s) butter
5 pound(s) potatoes, russets peeled and cubed
8 cup(s) chicken broth
1 teaspoon(s) cumin, ground
1/2 cup(s) jalapeno peppers coursly chopped
1/4 teaspoon(s) baking soda
4 cup(s) evaporated milk
- pinch salt
- pinch pepper
- sour cream green onions chopped
2 slice(s) thick cut ham

Steps:

  • In a large stockpot, saute onion in butter until tender
  • Add potatoes, chicken broth, and cumin then cover and cook until potatoes are tender about 20 to 30 minutes. Chop slices of ham in cubes add to potatoes and chicken broth.
  • Remove from heat and add jalapenos with liquid ( BAKING SODA TO PREVENT CURDLING ) and evaporated milk
  • Coursly mash potatoes in the pot with potato masher.
  • Stir well, then season with salt and pepper return to heat and simmer for 15 minutes stirring frequently.
  • Garnish individual servings with a dollop of sour cream and a sprinkle of chopped green onions.
