JALAPENO JELLY image

Number Of Ingredients 8

2 large red peppers
12 jalapeno peppers (or more)
1 1/2 cups apple cider vinegar
pinch salt
6 cups white sugar
4 oz liquid pectin
2 tbsp butter
red food colour (optional)

Steps:

  • Place all peppers in food processor or blender. Chop finely. Transfer peppers to large pan, add vinegar and boil for 15-20 minutes. Add sugar, salt and stir to disolve. Bring to a rolling boil (one that can't be stirred down) and continue to boil for abo1t 2 minute. Remove from heat and stir in pectin and butter. Add food colouring if desired. Pour into sterile jars, leaving 1/4" head space, add lids and then place in boiling water bath.
