Jacky's Chewy Peanut Butter Cookies image

This is a recipe I made up when I was 13yrs old. All of the parties and get togethers asked me to make these cookies since then. They are chewy and delicious. Hope you enjoy them as much as all of my friends and family has over the years. PS... I am 54yrs old.

Number Of Ingredients 10

2 1/2 c all purpose flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 jar(s) 16-18 oz peanut butter, creamy
1 c stick butter, softened..2 sticks
1 c sugar
1 c brown sugar, firmly packed
2 eggs
1 tsp vanilla extract

Steps:

  • 1. Preheat oven to 350'F Combine flour, baking powder, baking soda and salt in small bowl. Set aside.
  • 2. Mix Peanut butter with butter in large bowl with clean hands or spoon until smooth. Mix in sugars, eggs and vanilla extract. Mix in flour mixture just until blended.
  • 3. Lightly make balls about the size of golf balls. To make larger cookies (shown in pictures) just make the balls alittle bigger. The bigger the ball size the less cookie amount you will have. but worth it. Doesn't have to be perfect in shape. DO NOT PACK THE BALLS. Let them stay loose.
  • 4. Bake on ungreased SILVER baking sheets for 12-15 minutes or until light golden. Cool on rack.
