ITALIAN TORTELLINI SOUP image

Number Of Ingredients 18

1 pound Italian sausage
1/2 pound ground beef
1 cup chopped onion
3 large cloves garlic, sliced
5 cups beef broth
1/2 cup water
1/2 cup dry red wine
2 cups canned diced tomatoes with juice
1 cup thinly sliced carrots
1 tablespoon fresh basil leaves, minced (or 1 tsp. dry)
1 tablespoon fresh oregano leaves, minced (or 1 tsp. dry)
one 8 ounce can tomato sauce
1 1/2 cups sliced zucchini
8 ounces ( 2 cups) cheese tortellini
3 tablespoons fresh parsley, minced
1 green pepper, cut in half inch pieces
fresh grated parmesan cheese
good quality baguette or garlic bread

Steps:

  • Brown the sausage, beef, garlic and onions and drain. Add broth, water, wine, tomatoes, carrots, basil and oregano. Bring to a boil. Reduce heat and simmer uncovered for 30 minutes. Add tomato sauce, zucchini, tortellini, parsley and green pepper. Simmer for another 35 minutes or until tortellini is tender. Serve soup sprinkled with fresh grated parmesan cheese and bread. I use one quart home canned whole tomatoes in place of diced canned tomatoes and tomato sauce. Wine can be substituted with beef broth or water. You can use any variety of pasta in place of tortellini.
