Italian Ground Beef Casserole image

I found something like this on the allrecipes site, but changed it slightly. The original was billed as a meatloaf, but my version is too soft to call a loaf. Bake it in a casserole dish and scoop it out with a big spoon. Delicious with parmesan sprinkled pierogies or tortellini.

3/4 cup dry breadcrumbs
1 teaspoon italian seasoning mix
1 teaspoon oregano
1 teaspoon basil
1 teaspoon garlic salt
2 eggs
1/4 cup ketchup
14 ounces diced canned tomatoes, drained
1 1/2 cups shredded mozzarella cheese
1 1/2 lbs ground beef

Steps:

  • Heat oven to 350.
  • Combine breadcrumbs and seasonings.
  • Add eggs, ketchup and diced tomatoes. Let stand about 5 minutes.
  • Add shredded cheese and ground beef. Mix gently.
  • Spread in 2 litre casserole dish.
  • Cover with tinfoil.
  • Bake about 1 hour.
