Italian Cupboard Soup image

This is a wonderful recipe to serve soon those chilly days that seem to never go away at this time of the year. This is so good and hearty and uses ingredients that you would normally have on hand anyway. I love soup even if the weather isn't nippy. Hope you will enjoy this recipe

Number Of Ingredients 7

2 medium boneless pork chops, cut into cubes
1 tsp cooking oil
1 can(s) (15 oz) petite tomatoes, undrained
2 can(s) 14 1/2 oz. chicken broth
2 Tbsp dried minced onions
1 can(s) (15 oz) great northern beans, drained
8 oz fresh spinach leaves, torn

Steps:

  • 1. In a deep saucepan, brown the pork in cooking oil. Add all ingredients except spinach. Bring to a boil, lower heat and simmer for 15 minutes. Stir in the torn spinach and cook for 2 more minutes. It's delicious topped with grated Parmesan cheese and served with warm and crusty Italian bread
