Irish Soda Bread image

Recipe is from a member of my freshman Speech class who used the recipe for her "demonstration" speech.

Number Of Ingredients 12

4 c flour
1/4 c sugar
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
6 Tbsp shortening
1/2 c raisins
1 Tbsp caraway seeds
1 1/4 c buttermilk
1 egg, lightly beaten
2 Tbsp butter, melted
cinnamon sugar (optional)

Steps:

  • 1. Combine first 5 ingredients in a large bowl. Cut in shortening until crumbly.
  • 2. Stir in raisins and caraway seeds.
  • 3. Combine buttermilk and egg. Add to the crumb mixture.
  • 4. Turn dough onto a lightly floured surface and knead gently 5 to 6 times.
  • 5. Divide dough in half, shape into 2 balls and pat each into a 6" round loaf. Place on a lightly greased baking sheet.
  • 6. Using a sharp knife, cut a 4" cross about 1/4" deep on top of each loaf.
  • 7. Brush with butter and sprinkle with cinnamon sugar, if desired.
  • 8. Bake at 375 for 40 - 45 minutes or until loaves are golden brown.
