Irish Soda Bread image

This is one from Barb & Dad. I have to laugh, since I have always been the baker in the family, especially when it comes to breads...so finding this recipe just cracked me up!

Number Of Ingredients 8

2 cup(s) flour
5 tablespoon(s) sugar, divided
1 1/2 teaspoon(s) powder
1 teaspoon(s) salt
3/4 teaspoon(s) soda
3 tablespoon(s) cold butter, diced
1 cup(s) buttermilk
2/3 cup(s) raisins

Steps:

  • Oven to 375 degrees. Coat 8-9" round cake pan with PAM. In large bowl, combine flour, 4 T sugar, powder, salt and soda. Add butter, rubbing it into flour mixture with your fingers until coarse meal forms.
  • Make well in center of mixture and pour in buttermilk. Stir to blend. Stir in raisins. Flour hands and shape dough into a ball.
  • Transfer dough to pan, flatten slightly but not to edges of pan. Sprinkle with remaining sugar. Bake 40 min or toothpick test. Remove from oven let sit 10 min. Then cool on wire rack.
  • Note: you can serve this, traditionally, with a cup of tea, buttered with your favorite fruit preserves. This is good warm, at room temperature, or toasted the next day if you have leftovers.
