Irish Lamb Stew image

My in-laws love this stew! I make it about twice a year for them and they usually beg to keep the left overs :)

Number Of Ingredients 16

2 - bay leaves
3 - potatoes, chopped
1/2 cup(s) water
1/2 cup(s) all purpose flour
1 cup(s) white wine
4 cup(s) beef stock
4 cup(s) carrots, diced
1 large onion, chopped
2 large onion, diced
1 1/2 pound(s) bacon, thickly sliced and diced
3 clove(s) garlic, minced
6 pound(s) lamb shoulder, boneless
1/2 teaspoon(s) salt
1/2 teaspoon(s) pepper
1 teaspoon(s) thyme, dried
2 teaspoon(s) white sugar

Steps:

  • Cook bacon in large, deep skillet. Cook over medium-high till evenly brown. Drain and crumble then set aside.
  • Put lamb, salt, pepper, and flour in large mixing bowl. Toss to coat meat evenly. Brown meat in frying pan with bacon fat/grease.
  • Put meat into crock pot (leave 1/4 cup of fat in frying pan) Add garlic and yellow onion and saute till onion is golden. Deglaze frying pan with 1/2 cup of water and then add garlic-onion mix to crock pot with bacon pieces, beef stock, and sugar. Cover and simmer for 1 1/2 hours.
  • Add carrots, onions, potatoes, thyme, bay leaves, and wine. Reduce heat, simmer 20 minutes or until tender.
