IRISH CREAM CHEESE CAKE image

Number Of Ingredients 8

1 3/4 cups - Finely crushed Graham Crackers (recommend Chocolate Graham Crackers)
6 tablespoons - Butter
3 - 8oz Packages of Cream Cheese
1 cup - Sugar
4 - Large Eggs
1/3 - 1/2 cup - Irish Cream Liqueur (recommend Bailey's)
3/4 cup - Chocolate Mini Morsels (recommend Toll House Semi-sweet)
1 teaspoon - Flour

Steps:

  • Preparation: * Grease a 9 or 9 1/2 inch springform pan * Preheat oven to 375 degrees F * Place 1/2 cup of Morsels in a bowl with the flour and mix together to coat the morsels with the flour Making the Crust: * Crush the Graham Crackers * Melt the Butter * Mix the melted Butter and the finely crushed Graham Crackers * Place the Butter / Graham Cracker mixture in the greased pan * Spread the mixture evenly and up the sides about 1 inch Making the Filling: * In larger mixing bowl, beat the cream cheese and sugar until creamy * Add the eggs, one at a time, blending well in-between each * Add the Irish Cream liqueur and blend in well * Add in the 1/2 cup of the morsels / flour mixture * Fold in the morsels using a spatula Merging the Filling with the Crust * Pour the filling into the crust * Ensure the filling is somewhat even in the crust * Sprinkle the remaining 1/4 cup of Morsels over the top * Place the pan into the pre-heated oven * Bake for 40-50 minutes until golden brown around the side but the center still moves slightly Final Steps: * Remove the pan from the oven and let cool for 10 minutes * Remove the cake from the springform pan and place onto the serving plate * Refrigerate for about 3 hours for it to set up Actual Last Step: * Pull out of the refrigerator and cut yourself a nice piece of cheese cake * Sit back and enjoy your wonderful cheese cake and remember to share with our friends.
