Instant Pot® Sausage and Beans image

2 medium onions, diced
1 tablespoon olive oil
4 (15 ounce) cans navy beans, drained
2 pounds sliced smoked sausage
1 cup ketchup
1 cup apple juice
1 (2.5 ounce) package real bacon bits
2 tablespoons brown sugar
2 tablespoons cider vinegar
1 tablespoon Dijon mustard
2 cloves garlic, minced
1 teaspoon salt
1 teaspoon ground black pepper
¼ cup shredded Cheddar cheese, or to taste

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®), add oil, and select Saute function. Add onion and saute until soft, 5 to 7 minutes.
  • Add navy beans, sausage, ketchup, apple juice, bacon bits, brown sugar, cider vinegar, mustard, garlic, salt, and pepper. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 20 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
  • Serve topped with Cheddar cheese.
