Indian Pudding image

I don't remember where the recipe comes from, I have been making this for so many years. This is as good cold as it is hot. Good news is it is made in the crock pot! This has a tendcy to thick so use a teflon pan for the first step on the stove

3 c milk
1/2 c cornmeal
1/2 tsp salt
3 large eggs
1/4 c sugar
1/3 c molasses
1/2 tsp ground ginger
1/2 tsp ground cinnamon
whipped cream for garnish. we also like this with a little milk poured on it and eat it like cereal

Steps:

  • 1. Spray the interior of your slow cooker and preheat on high for 20 minutes.
  • 2. Meanwhile bring milk, cormneal and salt to a boil, stirring constantly for 5 minutes. You will want to use a teflon pot for this as it does have a tendency to stick.
  • 3. Cover and simmer for an additional 8 to 10 minutes.
  • 4. In a large bowl combine the reamining ingredients then add bot cormneal mixture.
  • 5. Mix til smooth, pour in slow cooker and cook on low 6 to 8 hours, or on high for 2 to 3 hours.
