Improvised Detox Salad image

I had planned to go on a 3-day juice detox but my juicer died the morning I was due to start so I was stuck with a whole load of fruit and veg. I threw together this salad using the ingredients that were to go into one of the juices. It turned out surprisingly yummy and looked gorgeous. This is definitely a salad for those who like their food on the tart side but the sweetness of the red apple balances it out nicely.

Number Of Ingredients 14

1 green apple, shredded
1 red apple, shredded
½ yellow bell pepper, shredded
½ cucumber, shredded
½ small raw beet, shredded
1 carrot, shredded
½ small red onion, very thinly sliced
1 broccoli stem, very thinly sliced
1 rib celery, very thinly sliced
2 sprigs fresh parsley, finely chopped
1 tablespoon extra-virgin olive oil
1 tablespoon lemon juice
salt and ground black pepper to taste
1 tablespoon toasted pine nuts, or to taste

Steps:

  • Combine green apple, red apple, yellow bell pepper, cucumber, beet, and carrot in a large bowl. Stir in onion, broccoli stem, celery, and parsley. Add olive oil, lemon juice, salt, and pepper. Toss to mix well. Garnish with pine nuts.
