Impossibly Easy BLT Pie image

If you are in a hurry, try using precooked bacon, cook for a minute to make it easier to crumble. You can also trim the fat but using only 8 slices and using skim milk and reduced fat mayonnaise.

12 slice bacon, crisply cooked, crumbled
1 c shredded swiss cheese (4oz.)
1/2 c original bisquick mix
1/3 c mayonnaise or salad dressing
3/4 c milk
1/8 tsp pepper
2 medium eggs
2 Tbsp mayonnaise or salad dressing
1 c shredded lettuce
6 slice tomato (thin)

Steps:

  • 1. Heat oven to 400 degrees F. Spray 9-in glass pie plate with cooking spray. Layer bacon and cheese in pie plate.
  • 2. I medium bowl, stir Bisquick mix, 1/3 cup of mayonnaise, the milk, pepper, and eggs with wire whisk until blended. Pour into pie plate.
  • 3. Bake 25 to 30 minutes or until top is golden brown and knife inserted in center comes out clean. Let stand 5 minutes before serving. Spread 2 tablespoons mayonnaise over top of pie. Sprinkle with lettuce. Place tomato slices on lettuce.
