HUNGARIAN POTATO SALAD image

Number Of Ingredients 14

2 lbs boiling potatoes
2 Tbsp olive oil
2 Tbsp vegetable oil
1 Tbsp dill vinegar
1 tsp Dijon mustard
l/2 tsp paprika
1/2 tsp salt
1/4 tsp white pepper
1/3 cup minced green bell pepper, drained well
3/4 cup minced onion, drained
1 1/2 cups sour cream
2 hard-boiled eggs, chopped
dill sprigs for garnish
sliced pimiento for garnish

Steps:

  • Cover potatoes with salted water and boil for 25 minutes, or until tender. Drain, cool and peel. Cut int 1/2 inch slices and put in large bowl. Whisk oils, vinegar, mustard, paprika, salt, and pepper and pour over potatoes. Add bell pepper and 1/2 cup onions. Toss and let marinate , loosely covered, for 1 hour. Stir in sour cream, eggs, remaining onion, and salt and pepper to taste. Chill covered for at least 2 hours.
