HUMMINGBIRD-CARROT CAKE image

Number Of Ingredients 20

CAKE
2 ripe bananas, chopped
3/4 c finely chopped fresh pineapple
12 oz grated carrots
1 c chopped pecans
3 eggs
1 3/4 c sugar
1 c vegetable oil
1 t vanilla
1 t cinnamon
1 t nutmeg
1/2 t ginger
1 1/2 t salt
2 1/2 c flour
2 t baking soda
FROSTING
2 packages light cream cheese at room temp
4T butter at room temp
2 c powdered sugar
1t vanilla

Steps:

  • Mix fruit & carrots in food processor. Fold in pecans and 2T flour. In separate bowl, beat eggs until light yellow. Beat in sugar, oil, and vanilla. Sift remaining dry ingredients together and mix into egg mixture, then fold in fruit mixture. Pour into 2 greased 8" cake pans. Bake at 350 for 50 mins or until toothpick inserted into middle comes out clean. Cool to room temp.
