There is a little out of the way bbq joint in between High Rolls and Cloudcroft, NM that made exceptional barbecue. But what I really loved were their onion slices. They were crispy crunchy and ever so sweet! Almost like eating a slice of apple. You WANT this on your pulled pork bbq sandwich! They would never tell me how they did it but I think I figured it out.

Steps:
- Peel and slice onions into roughly 1/4" or bigger slices.
- Place onions in a bowl and pour half and half over onions. Mix well.
- Cover with plastic wrap. Place in refrigerator for 24 hours.
- Drain half and half (reserve...it makes a great potato soup) from onions. Rinse onions in cool water drain on paper towels. Serve immediately or put in a plastic bag to use later.
