Steps:
- In a large skillet, fry the bacon until crisp. Drain on paper towel, crumble and set aside. Add onion to the bacon fat and saute until tender. Whisk in the mustard, lemon juice, sugar and vinegar. Simmer over low heat, whisking until smooth and the sugar dissolves. Place spinach in large bowl. Sprinkle bacon, avocado and orange slices over spinach. Pour hot dressing over salad and toss. Serve immediately.
