Hot Shrimp-Avocado Salad image

Number Of Ingredients 9

1 tablespoon butter
1 1/2 teaspoons curry powder
1 1/4 teaspoons salt
1 medium tomato, chopped
1 medium onion, chopped
1 1/2 pounds fresh shrimp, cleaned and well-drained
2 tablespoons lemon juice
1 cup sour cream
3 or 4 avocados, peeled

Steps:

  • Melt butter and stir in curry powder and salt. add tomato, onion, and shrimp, and sauté until shrimp are done and seasoning is soft. Add lemon juice. If mixture is a bit watery, drain some of the liquid at this point. Stir in sour cream and heat thoroughly. Serve hot as follows: For a salad meal, halve avocados and scoop in shrimp mixture. For a salad accompaniment, spoon onto lettuce and surround with slices of avocado.
