Hot potato salad w/bacon image

You will never go back to cold potato salad again!!!

Number Of Ingredients 11

VINAIGRETTE
1/2 c white wine vinegar
1 Tbsp coarse grained mustard
1 Tbsp sugar
2 dash(es) black pepper
2 dash(es) garlic salt
OTHER INGREDIENTS
2 1/2 lb red potatoes diced
3 dash(es) salt
1 medium red onion diced
6 slice bacon

Steps:

  • 1. Mix all vinaigrette ingredients together in a small bowl and set aside
  • 2. Add potatoes to pot of salted cold water. Bring to a boil over high heat, then reduce heat to a simmer and cook for 20 minutes or until tender. Drain and place in a large bowl, cover with foil to keep warm.
  • 3. Add bacon to a saute pan and cook until crisp over medium heat. Remove bacon from pan, add red onion, 2 dashes of pepper and garlic salt to bacon grease and saute for 3 minutes.
  • 4. Add vinaigrette to the onion and bacon grease mixture, let cook until reduced and thickened, 2 to 3 minutes. Pour over potatoes and toss gently. Enjoy!
