Steps:
- Cook noodles according to the package instructions, just in time to rinse in hot water, drain and add to sauce.
- Heat 2 tsp oil in a saute pan over medium high heat.
- Add pork and cook until browned, breaking up with the back of a spoon.
- Whisk together soy/tamari, balsamic vinegar and Sriracha.
- Pour sauce over pork and stir, then add baby spinach
- Cook for two minutes or until pork is cooked through and spinach wilted.
- Pour pork mixture over the noodles and toss.
