Hot Applesauce Cake image

From an older Amish cookbook I discovered at a thrift store. The name given as credit for this recipe in the book is Mrs. Menno E. Schwartz, Sr. -I would think that homemade, chunky applesauce would be the most delicious in the recipe, but regular would probably be yummy too.

2 cups sugar
3/4 cup shortening
2 1/2 cups sifted flour
2 eggs
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon ground cloves
1 teaspoon allspice
2 teaspoons baking soda
1 teaspoon baking powder
1/2 cup raisins
2 cups hot applesauce, unsweetened
1/2 cup chopped nuts (optional)

Steps:

  • Cream sugar and shortening, add eggs and blend well.
  • Sift dry ingredients together.
  • Mix applesauce and raisins.
  • Add dry ingredients alternately with the applesauce to the sugar and shortening mixture.
  • Pour into 9x13 inch greased and floured pan. Bake at 350 for 45 minutes or until done.
  • Sprinkle 1/2 tsp cinnamon and 1/4 cup sugar over batter instead of frosting.
