Being a Northern Ohio girl we did not raise black-eyed peas. So when we moved to Mississippi I had never heard of eating black eyed peas on New Year's Day to bring good luck, for the coming year. Well, I tried them many ways and was not a fan, until I came across this recipe in a very old Mississippi cookbook. Ah, I finally...

Number Of Ingredients 9

1/2 lb bacon, cut into pieces
1 medium onion,chopped
1/2 large green bell pepper,chopped
1 can(s) 16-oz. black eyed peas, rinsed and drained
1 can(s) 16-oz. diced tomatoes
1 can(s) ro-tel tomatoes/chilis, hot or mild
13/4 c water
1 c white rice, uncooked
2 c cooked ham, chopped

Steps:

  • 1. In a large skillet, partially fry bacon, add chopped onion and peppers, fry until vegetables are tender. Drain grease.
  • 2. Add all the remaining ingredients. Pour into a lightly greased 2 quart baking dish. Cover. Bake in a Preheated 350 degree oven for 40- 50 minutes or until rice is tender.
  • 3. Good Served with just a green salad and cornbread.
