Honey Ham & Black-Eyed Pea Salad image

Number Of Ingredients 11

1/2 cup diced lean honey ham
1/2 cup finely chopped red onion
4 medium roma (plum) tomatoes, chopped (1 1/3 cups)
1 medium stalk celery, finely chopped (1/2 cup)
1 small red bell pepper, chopped (1/2 cup)
1/4 cup cider vinegar
1 tablespoon olive or vegetable oil
1 teaspoon sugar
1/4 teaspoon dried thyme leaves
1/8 teaspoon red hot pepper sauce
1 (15-ounce) can black-eyed pea, , rinsed and drained

Steps:

  • 1. Mix all ingredients except peas in large glass or plastic bowl. Cover and refrigerate 1 hour to blend flavors. Just before serving, stir in peas.
