Honey Glazed Parsnips image

My neices and nephew love these; so does my hubby (me, too)! Note: Carrots are also real good if you don't like parsnips.

Number Of Ingredients 7

1 tablespoon(s) butter, unsalted
3 cup(s) parsnips, peeled and julienned (about 2 inch pieces)
1/4 cup(s) brown sugar, firmly packed (i prefer dark, but light is fine, also)
2 tablespoon(s) v8 juice
1/4 teaspoon(s) kosher salt
1/8 teaspoon(s) fresh ground black pepper
1/4 cup(s) honey

Steps:

  • Melt butter in a large nonstick skillet over medium heat.
  • Add parsnip and the remaining ingredients; stir until well blended.
  • Cover and cook 7-10 minutes until tender, stirring occasionally.
