Honey Glazed Carrots image

This is about the only way I like carrots and it seems like everyone has a recipe for this so I will spare you details

Number Of Ingredients 11

2 lb carrots, baby
1/4 c green onions, finely chopped
1/4 c butter
1/4 c honey
1 tsp orange peel, grated
1/2 tsp salt
1/2 tsp cinnamon, ground
1/4 tsp pepper
2 tsp cornstarch
1/2 c orange juice
4 tsp mint- or- parsley ( flat leaf) - fresh, minced

Steps:

  • 1. Place 1 inch of water in skillet, add carrots. Bring to a boil. Reduce heat, cover and simmer 15-20 minutes or until crisp tender. Drain & set aside.
  • 2. In the same skillet, saute green onions in butter until tender. Stir in the honey, orange peel, salt, cinnamon and pepper. Combine cornstarch & orange juice until smooth, stir into onion mixture. Bring to a boil, cook & stir for 1-2 min. or until thickened.
  • 3. Return carrots to the pan. Cook & stir for 2 min. or until heated through. Sprinkle with mint.
