Honey Bun Cake image

This is a quick and yummy recipe that can easily be turned into glazed cupcakes for friends, co-workers, or a bake sale. The use of olive oil creates a super moist cake that can be used to replace vegetable oil in any recipe. Most photos from internet, no copyright infringement intended.

1 box yellow cake mix
4 large eggs
1 c light sour cream
2/3 c olive oil, extra virgin
1/3 c water
FOR CENTER:
1 1/2 c brown sugar, firmly packed
1 tsp cinnamon
FOR ICING/GLAZE:
1 1/2 c powdered sugar
1 1/2 Tbsp melted margarine
1/4 c water

Steps:

  • 1. Preheat oven to 350 degrees. Combine brown sugar and cinnamon in small bowl. Set aside. Mix together all cake ingredients per box directions and spread half of batter into greased 13x9 pan.
  • 2. Sprinkle sugar and cinnamon mixture over first layer of batter. Pour remaining batter on top. Swirl butter knife in large circles in cake layers. Bake.
  • 3. Cool until warm. While cooling cake, mix together powdered sugar, margarine, and water to make glaze. Spread glaze over entire cake. Serve and enjoy.
