Honey Almond Figs image

Always looking for new fig recipes when I have a bumper crop like this year. This one comes from Tessa West in De Ridder, Louisiana. These are delicious on toast and Tessa's grandfather loves them on pancakes. I haven't tried it yet but I think they would also be good with pork. I've used it as a glaze on a simple "figgy" cake...delicious!

Number Of Ingredients 5

1/3 cup(s) honey
1/2 cup(s) brown sugar
1/2 teaspoon(s) almond extract
3 quart(s) figs, coarsely chopped
1/2 cup(s) water or fruit juice or wine

Steps:

  • Clean figs and quarter or chop. Cook figs with 1/2 cup of water, juice, or wine. Figs will stick and scorch so stir often.
  • After figs have cooked down, add in honey, brown sugar, and almond extract
  • Continue to cook down til you reach desired consistancy.
  • Remove from canning bath and allow to cool.
