Hominy with Cheese image

Quick, easy, and inexpensive side dish that can be served with anything. To limit clean-up, use a pan that can go from stove-top to oven.

2 (15 ounce) cans hominy
1 cup milk
1 cup shredded sharp Cheddar cheese, divided
½ cup chopped tomato
1 green bell pepper, diced
½ cup water
¼ cup butter
1 jalapeno pepper, diced
1 teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine hominy, milk, 1/2 cup Cheddar cheese, tomato, green bell pepper, water, butter, jalapeno pepper, and salt in a heavy skillet. Cook over low heat, stirring occasionally, until cheese and butter have melted, about 5 minutes.
  • Transfer hominy mixture to an 8-inch baking dish; sprinkle remaining cheese evenly on top.
  • Bake in the preheated oven until top starts to brown, about 30 minutes.
