Homemade Ramp Mayonnaise image

This garlicky mayonnaise is delicious with cold cuts, grilled or fried fish, or as a dip. The amount of ramps to use is really up to your personal taste--anywhere from a couple of tablespoons to a small bunch.

1 large egg
2 large egg yolks
1 teaspoon Dijon mustard
salt to taste
¾ cup light olive oil
2 tablespoons extra-virgin olive oil
2 tablespoons freshly squeezed lemon juice, or more to taste
minced ramps, to taste

Steps:

  • Combine egg and egg yolk in a food processor and start processing. Slowly pour in light olive oil and extra virgin olive oil until mixture becomes thick and creamy. Add lemon juice and salt.
