HOMEMADE MARMALADE image

Yield 8 cups

Number Of Ingredients 4

1 1/2 pounds whole Seville (or sour) oranges, washed and quartered
1 whole lemon
7 cups sugar
7 cups water

Steps:

  • 1. Cleanly cut off the seeds and central white membrane from each orange quarter. 2. Put these with 1 cup of water on a medium heat and simmer briskly for 30 minutes. 3. Slice each orange quarter in half vertically and then across into 1/4-inch (or thinner if you prefer) strips. 4. Put the sliced oranges with 6 cups water in a non reactive pan. Strain in the juice from the pips and press down well in the sieve. Bring to a boil and cook till the fruit is translucent, approx. 40 minutes. 5. Add the sugar and boil for another 30 minutes. 6. Begin testing with a little marmalade on a saucer. Put it in the freezer for 5 minutes and then check, by tipping the saucer to see if it has set. If not, boil 5 more minutes and test again. 7. Pour into sterilized jars.
