Time 35m

Number Of Ingredients 12

2 large eggs, beaten
1/4 c evaporated milk , water or 2% milk
1 c panko bread crumbs- more if needed
1 c bisquick, or all purpose flour
1 lb cod fillet -cut into 1/2-inch thick sticks 3-4 inches long
salt and pepper to taste
TARTAR SAUCE:
1 c miracle whip salad dressing
2 Tbsp pickle relish, sweet
1 Tbsp minced onion or onion powder to taste
1/4 c ketchup
pepper to taste

Steps:

  • 1. Prepare fish: Preheat oven to 400^. In a shallow dish beat eggs, and milk; set aside. Pour bread crumbs in a shallow pan;in another pan place Bisquick or the flour. Sprinkle fish pieces with salt and pepper. Roll fish pieces in flour to cover well, then dip in the egg mixture. Then press fish into Panko bread crumbs to cover completely . Place each fish stick on a sprayed baking pan.(I like to cover pan with foil and spray that- easier clean up). Spread them out so they are not touching. Bake until lightly browned , about 15 minutes, then turn over and bake for 5 minutes more. --- Note: If you want to fry these- use 1/4 or so of Crisco or canola oil. in a large skillet over medium-hi heat. Cook in a single layer not touching; until golden brown, about 1 minute on each side. Drain on paper towel. Serve hot.
  • 2. Tartar Sauce: Combine all ingredients together; blending well. Place in refrigerator while preparing fish.
