I am adding this mainly so I do not lose it. We really enjoy this recipe and we stuff it into hog casings and grill

Number Of Ingredients 14

10 lbs course ground pork butt
12 -15 tablespoons chili powder, made from chili pods. mild med and hot
5 tablespoons paprika
4 tablespoons cumin seeds, and roasted and ground
4 tablespoons kosher salt
2 tablespoons coriander
3 tablespoons oregano
2 tablespoons red pepper flakes
1/2 teaspoon ground cloves
1/4 teaspoon ground cinnamon
3 tablespoons garlic powder
1 1/2 tablespoons ground black pepper
1/2 cup cider vinegar
1 1/2 cups icy water

Steps:

  • Combine dry ingredients and add to ground pork then while mixing add in vinegar and water. Let sit overnight in fridge so spices can meld. Do a final taste and tweak spices if needed.
  • Stuff into hog casings or package for bulk.
