Homemade Canned Pepper-Stuffed Pepper Soup image

I Love to share recipes using my Grandma Vinion's Canned Peppers in Red Sauce. This is one of them. Grandma shared her Stuffed Pepper Soup recipe with me years ago and I Love it because it's quick and easy. But I thought it could be just a little bit better. 2 lb lean ground beef
3 qt water
1- 28 oz can tomato sauce
2 pt grandma vinion's canned peppers in red sauce sweet (if you don't have this recipe, it is in my recipe box)
1-28 oz can italian stewed tomatoes
1 1/2 c rice, long grain (uncooked)
1 tsp crushed red pepper flakes
1 Tbsp italian seasoning
2 Tbsp beef flavored soup base
fresh cracked sea salt
fresh cracked pepper
2 peppers, red or green chopped

Steps:

  • 1. In a large skillet, cook lean ground beef until browned. Drain & set aside.
  • 2. In a large stock pot, add water, tomato sauce, Grandma Vinion's Canned Peppers in Red Sauce (sauce as well), Stewed tomatoes, rice, chopped red & green peppers, Crushed red pepper flakes, Italian seasoning, Beef soup base, fresh cracked sea salt & pepper to taste.
  • 3. Bring mixture to a boil over medium heat, stirring frequently. Add lean ground beef. Reduce heat to a simmer. Cover and simmer for about 45 minutes or until rice is fully cooked.
  • 4. Add additional salt & pepper if needed. Serve with fresh baked corn bread & a side of cole slaw! Perfect for a chilly day. Warms the heart & soul! :)
