Home Fries image

My mother used to make these, and now I do. She called them home fries. I don't know of any other name for them. I might use a few different seasonings, but the method is the same. My family loves them! These are good without onions if you don't like them.

Number Of Ingredients 6

5-6 medium sized russet potatoes
1/2 c diced onion (optional)
lawry's seasoning salt
salt and pepper
1 Tbsp butter
1 Tbsp vegetable shortening

Steps:

  • 1. Boil potatoes whole for 25 minutes. Drain, fill pot with cool water and set aside until you can handle them easily
  • 2. Melt margarine and vegetable shortening in a large skillet, turn burner off.
  • 3. Peel potatoes, quarter and slice. Should look like little triangles. Add to pan.
  • 4. Dice onions, add to potatoes in pan. Turn burner back on. Move around to combine and distribute evenly in pan
  • 5. Add seasoning salt, salt and pepper to taste.
  • 6. Brown on one side over medium-high heat, about 5 minutes, turn over, brown on other side. You may put potatoes in a covered casserole dish to keep warm.
  • 7. Enjoy!
