Holiday Spinach Casserole image

This is one of those easy holiday casseroles that you can prepare ahead of time and just pop it in the oven when ready to eat. It is cheesy, creamy and oh so good. The spinach flavor really shines through. So yummy!

Number Of Ingredients 6

6 Tbsp butter
8 oz white American cheese
6 beaten eggs
6 Tbsp flour
4 c small curd cottage cheese
3 packages of frozen spinach

Steps:

  • 1. Preheat oven to 350. Cut butter and cheese into 1/4 inch cubes. Set aside.
  • 2. In medium bowl beat eggs lightly. Add flour, cottage cheese, butter, and American cheese. You can add a pinch of salt & pepper, but I normally don't. Defrost the frozen spinach, and do your best to remove and squeeze out most of the water. Add to mixture and mix well.
  • 3. Place in a greased ovenproof dish (I use a large ovenproof round Pyrex bowl). Bake at 350 for 1 hr. Serve hot.
