HOLIDAY CRANBERRY MOLD image

Number Of Ingredients 10

3 OZ pkg. cherry flavored gelatin
1 C. Sugar
2 C Boiling Water
1 15.5 OZ can crushed pineapple
2 Tbs. lemon juice
2 C fresh cranberries, ground
2 small oranges, unpeeled, seeded and ground
1 C chopped walnuts
2 C finely chopped celery
lettuce leaves, oranges twists for garnish

Steps:

  • Dissolve gelatin and sugar in boiling water. Drain pineapple, reserving juice. set pineapple aside. Add water to pineapple juice to measure 1 cup. stir in lemon juice. stir juice mixture into gelatin mixture; chill until consistency of unbeaten egg whites.Add cranberries, oranges, celery and walnuts to gelatin mixture; mix well. Pour into a lightly oiled 10 cup mold; chill until set. Unmold on lettuce leaves, garnish with oranges and cranberries.
