HOG ISLAND CARIBBEAN BAKED BEANS image

Number Of Ingredients 23

1 lb Rancho Gordo Cranberry beans, cooked until just done
2 onions, small dice
2 green bell peppers, small dice
4 celery ribs, small dice
1/2 C minced garlic
1/2 C minced ginger root
3 thyme sprigs
2 C tomatoes, diced, peeled and seeded
1/2 C Dijon mustard
2/3 C Molasses
1/3 C Worcestershire sauce
1/3 C Ron's spice mix (see below)
2 T Kosher salt
Ron's Spice Rub:
2 T Chili Powder
2 T Piloncillo or brown sugar
1 T ground Cumin
1/2T ground Allspice
1/2T ground Coriander
1/2T Mexican orgeano, crushed by hands
1/2t Pimenton Dulce (sub: double the Spanish Paprika)
1/2t Spanish Paprika
2 T Kosher Salt

Steps:

  • Cook beans until just done and place into a casserole dish with the cooking liquid. In a non reactive pot, saute onions, peppers, celery and thyme for about 4-5 min. Add garlic and ginger and continue to cook, until you really smell them. Add spice mix and coat well, then add Dijon, molasses, tomatoes and salt, cook until just starting to simmer. Combine these ingredients with the cooked beans and liquid in the casserole dish, cover and bake in a 350 oven for 90 min.
