Herbed Turkey Tetrazzini image

I love this stuff. Anything with a rich creamy sauce and cheese, yummy!

Number Of Ingredients 15

2 cup(s) chopped turkey breast meat
2 tablespoon(s) olive oil
1/4 cup(s) chopped onion
1/2 cup(s) chopped fresh mushroom
1/4 cup(s) butter, melted
1/4 cup(s) all purpose flour
1 cup(s) whole milk
1 cup(s) chicken broth
2 tablespoon(s) fresh chopped parsley
1 teaspoon(s) dried whole tarragon
1/8 teaspoon(s) pepper
1 dash(es) ground nutmeg
2 1/2 cup(s) cooked spaghetti or fettucine
1 cup(s) mozzarella cheese, divided
- chopped parsley

Steps:

  • Brown turkey in olive oil. Remove from pan, set aside. Melt butter in pan over medium heat.
  • Saute onion and mushrooms in butter. Add flour, stirring well. Cook 1 minute, stirring constantly. Gradually add milk and chicken broth; cook over medium heat stirring constantly until mixture is thickened and bubbley.
  • Stir in parsley, tarragon, pepper and nutmeg. Stir in spaghetti, turkey, and 1/4 cup cheese, stirring well.
  • Sprinkle remaining cheese on top and cover over low heat until cheese melts. Sprinkle with remaining chopped parsley.
