HERBED POTATO-EGG SCRAMBLE image

Number Of Ingredients 8

2 tsp. canola oil
1 med. red potato, unpeeled, cut into 1/2 in. pieces (3/4 to 1 C.)
1/8 tsp. salt
3 T. water
6 eggs
1/2 tsp. dried or 1 tsp. chopped fresh basil leaves
1/4 C. sliced roasted red bell peppers (from a jar)
2 T. shredded Parm. cheese

Steps:

  • In 12 in. nonstick skillet, heat oil over med-high heat. Add potato, sprinkle w/ salt. Cook 1-2 min. stirring frequently. Add water, cover and reduce heat to low. Cook 5-7 min. stirring occasionally until potato is fork-tender. Meanwhile, in med. bowl beat eggs and basil w/ wire whisk until well blended. Stir in roasted peppers. Pour egg mixture over potato in skillet. Cook over med-low heat 3-5 min. stirring frequently until eggs are set but still moist. Sprinkle w/ Parm. cheese.
