HERB ROASTED RED POTATOES image

Number Of Ingredients 7

1 lb Red potatoes, washed and cut into small cubes
1 tsp Olive oil
1 tbsp Chopped fresh chives
1 tbsp Chopped fresh parsley
1 tbsp Chopped fresh tarragon leaves
1 tsp Unsalted butter, room temperature
Salt and Pepper to taste

Steps:

  • Preheat oven to 425º. Toss potatoes in olive oil and salt and pepper. Place onto a parchment or foil lined sheet pan and bake for 35-40 minutes, or until golden brown. Place potatoes in a large bowl along with the butter and toss. Cover with foil until ready to serve. Toss in herbs and taste for seasoning, serve immediately.
