Henri's Caesar Salad image

Number Of Ingredients 13

1/3 cup olive oil
1/3 cup vegetable oil
1 lemon Juice of 1 large
1 garlic large, minced
1 teaspoon Worcestershire sauce (optional)
1/2 teaspoon salt
1/4 teaspoon black pepper freshly ground
1/4 teaspoon dry mustard
8 cups Romaine lettuce 2 medium heads
1/4 cup Parmesan cheese grated
1/4 cup Romano cheese grated
1 egg at room temperature
1 cup croutons garlic-seasoned

Steps:

  • 1. One or two hours before serving, blend together in a small bowl olive oil, vegetable oil, lemon juice, garlic, optional Worcestershire sauce, salt, pepper and mustard. Cover and let stand at room temperature.2. Tear romaine into bite-size pieces. Place in a large salad bowl cover and chill.3. In a small bowl combine cheeses and set aside.4. To serve, beat egg into dressing. At the table pour dressing over romaine toss. Add croutons and cheese, tossing lightly.
