It's soup weather, my favorite time of the year. I used what I had on hand to develop this tasty soup. I love peas and I love this soup...the mild flavor of the leeks will not overpower the other wonderful flavors. Soup will become thicker as it cools as with most soups that include beans or peas. Number Of Ingredients 11

1 lb dry split peas
1/2 small onion, chopped
1 leek, cleaned well and sliced thin
2 stalk(s) celery, chopped
2 carrots, cleaned and chopped
10 oz smoked ham, cubed
4 c each - chicken broth and water
1 Tbsp flavorful chicken base - optional
1/2 tsp each - dried marjoram & dried thyme
1 bay leaf
Salt and pepper to taste

Steps:

  • 1. Place dried peas in colander and rinse well. Place in a saucepan and cover with water...bring to a boil and continue for 3 minutes. Drain and set aside.
  • 2. Prepare vegetables and ham. In a Dutch oven, add 1 tablespoon oil of your choice. Saute the leeks, onion, carrots and celery, stirring often for 4 - 5 minutes or until softened.
  • 3. Now, add the peas, ham, seasoning, broth, base and water. Bring to a boil, then cover and reduce heat - cook for 1 - 1 1/2 hours or until peas are soft. Remove bay leaf.
  • 4. Adjust seasonings if need be and serve hot!
