Steps:
- 1. In a large pot, cook bacon until crisp. drain and set aside. Pour off all but 1 tbsp fat. 2. combine carrot, celery root, potato and 2 tbsp water in microwaveable bowl. Microwave until just tender, approx 5 min. 3. Saute onion in bacon fat on medium heat until tender, approx 6-8 min. Add carrot mixture and cook 2 min. 4. Add flour and cook 2 min, stirring. Add clam juice and water and whisk until smooth. Heat to boiling, stirring occasionally. Add cod chunks, cover and cook 4-5 min until fish just turns opaque. 5. Stir in milk, 1/4 tsp salt and black pepper. cook 1-2 min until hot but not boiling. Crumble bacon over. Sprinkle with fresh parsley and serve.
