Hearty Barley Bake image

Number Of Ingredients 14

2 c freshly sliced mushrooms
1 c thinly sliced carrots
1/2 c chopped onion
1 tsp vegetable oil
1 clove garlic,minced
12 oz bulk pork sausage
1 can(s) cream style corn
10 oz spinach, frozen,thawed and squeezed dry
1-1/2 c barley,cooked
3 green onions,chopped
1 tsp dried savory
1 tsp dried marjoram
1 tsp dried thyme
1/2 c shredded parmesan cheese

Steps:

  • 1. In a large skillet, saute the mushrooms, carrots and onion in oil until tender. Add garlic; cook 1 minute longer. Transfer to a large bowl.
  • 2. In same skillet, cook sausage over medium heat until no longer pink; drain. Add to mushroom mixture. Stir in the barley, corn, spinach, onions, savory, thyme, marjoram.
  • 3. Transfer to a greased shallow baking dish. Cover and bake at 350 for 40 minutes. Sprinkle with cheese. Bake, uncovered, 5 min longer or until cheese is melted
