HEALTHY NEW ENGLAND CLAM CHOWDER image

2 TBS margarine
1 large onion, finely chopped
1-9oz bottle clam juice
1 cup water
2-3 med potatoes, peeled and diced
2 -7oz minced clams
2 cups nonfat milk
1 small can evaporated skim milk
salt and pepper to taste

Steps:

  • melt margarine in large saucepan. add onion and saute until limp. add clam juice, water and potatoes. simmer until potatoes are tender. add clams and mils. heat slowly over low heat about 45 minutes. Season to taste
