Healthy Cowgirl Cookies image

My favorite cookie is found at our local Flying Star restaurant. It's packed full of dried fruits and runs about $2 per cookie. I thought I'd try my hand at a healthy (and less expensive) version.

Number Of Ingredients 15

1/2 cup butter or 1/2 cup margarine
1/2 cup low-fat yogurt
1 cup brown sugar
1/2 cup sucanat
2 eggs
1 cup all-purpose flour
1/2 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon vanilla extract
3 cups oats
1 cup dried cranberries
1 cup chopped dried apricot
1 cup sweetened flaked coconut
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees.
  • Beat butter, yogurt, sugar and sucanat together.
  • Mix in eggs.
  • Slowly add flours, and baking soda.
  • By hand mix in remaining ingredients.
  • Drop by rounded tablespoon onto ungreased cookie sheet.
  • Bake 11-12 minutes.
  • Remove from sheet promptly and let cool on cookie rack.
